I've been canning watermelon jelly. I'm really excited because this is a new one for me. I love canning but have never thought about making jelly from the meat of a melon.
The jelly only took 4 ingredients: sugar, pectin, melon meat and lemon juice.
I'm also canning the rind of the melon. I've done this before. It is way more time consuming than making jelly but just as much fun. When finished the rind will be sweet perfection in a jar. I'll share photos when it's finished.

Your jelly brings back memories of my childhood. My mom would make Watermelon jelly and beet jelly. I keep telling myself that I'm going to make both but....so many other things to do. Maybe this year.
Your jelly sure does look pretty. I have never tasted of Watermelon Jelly though. What does it taste like? Last Summer I bought a jar of Strawberry Fig Preserves and they were fantastic. The taste was out of this world. I
hope to find some more this year.

I am afraid I won't have fruit to can this year. The fig tree is not doing as well as it did the past 3 years. I am hoping that there is enough for a couple of batches though.
I have never tried watermelon jelly. It sounds and looks good though.

Question - doesn't the juice drain from the 'meat' and just leave it stringy? Had tons of other kinds of jelly...but never watermelon.

Never had watermelon jelly. But was raised on watermelon rind preserves...That's good southern eating....Let me know how the jelly turns out for you.
The jelly looks beautiful, so clear. My aunt used to make watermelon pickles from the rind. She would leave just a touch of pink, so they were so pretty in pink, white and green. I wish I had her recipe!
I have not heard of either one but I certainly love watermelon....and it looks so pretty
