My cousin Thelma called on New Year's Eve to offer this thing to me. I'd never dealt with this type before and was a bit apprehensive, to say the least. Ok....no more stalling...
This is a very large collard green stock.
Thelma had to talk me through the process of cutting the leaves off in order the cook them. I'm not a fan of the taste because they are more dense than mustard or turnip greens and took way longer to cook. Mr. Cowboy loved them.....go figure!
I am with Mr. Cowboy. I love collard greens. With cornbread. What can I say? I am from the South.

I thought "Collards" but wasn't 100% sure. But then I am southern too - and my Granny would even cook poke salad. I wouldn't eat the poke salad, but I would eat the collards. She usually mixed in some turnip greens with them.
