Lamb Rack Recipe


I bought a package of lamb the other week & just decided to cook them yesterday.
Here's how I did it.
Preheat grill or oven to 300 degrees.
Make a rug using Accent, pepper, sea salt & a little bit of Coco powder. Generously rub onto lamb rack. Lay aside.
Next, combine 1/4 cup vinegar, 1 teaspoon olive oil, 2 teaspoons honey or table syrup & 4 tablespoons of strawberry, apricot or raspberry jam. Note: This process tends to take the rangy or gamy taste from the meat.
Place rack onto foil bed & pour liquid over it. Loosely cover.
Cook for 1 1/2 hours on grill or 2 hour in oven. If you want it rarer, remove from heat thirty minutes earlier.
This recipe also works well on lamb chops, thick pork chops and chicken quarters.
I serve the lamb with mix veggies, wild rice and garlic bread.

    I had bison last night - I wish I had read this first. (The bison was might fine as I prepared it - but this might have made it better!)
