Crock Pot Ribs

The following recipe is one of the best I've ever used and I wanted to share it with you all.

  1. Turn Crock Pot on high so that it's nice a hot by the time you get everything prepared.
  2. In a small bowl mix 2 tablespoons salt, 2 tablespoons pepper, 2 teaspoons coco mix (yes, I said coco), 1 teaspoon thyme, 1 teaspoon onion seasoning and 1 teaspoon garlic seasoning (I sometimes use a hickory or mesquite seasoning, as well). This is what is know as a "dry rub."
  3. Rinse and pat dry your selection of ribs. Rub mixture all over ribs and do not spare any of it. 
  4. Place ribs in Crock Pot. Do not add anything such as water or any liquid to the pot. The ribs will make their own liquid.
  5. Cook on high with lid on for about 4 to five hours. Into the third hour, pour off any excess liquid and allow ribs to finish cooking.  Of course you will want to sample a slice around the fourth hour, just to make sure everything is progressing as it should (wink, wink).
  6. Allow to rest in Crock Pot before serving. I tend not to serve with bar-b-que sauce because the ribs are excellent all by themselves.
I wanted to post a photo of the ribs but when I thought about it, the family had gnawed their way through all said ribs.............sigh!
