What's For Dinner?

Tonight's dinner was so tasty. Take a look...

My wacky girlfriend, Kathy gave me the following recipe:
4 chicken breasts pounded fairly flat
4 jalapeño peppers, seeded if you don't like the heat
Shredded cheese (your favorite) I used Colby Jack & Cheddar approximately 4 large tablespoons
8 strips of bacon
Optional - 4 sausage links
Directions:
Lay each chicken breast out; place peppers, cheese & sausage in the middle. Fold over & wrap with bacon strips.
Bake at 350 degrees about 45 mins to an hour or until bacon is fully done.

You know, that not only looks delicious, it looks like something I could actually do ... probably leaving out the peppers, though, but maybe banana peppers. Those I like.
