Mug Rug Thursday

First, a bit of canning news. I got my hands on two pounds of fresh strawberries.....stuffed my face with alot of them and canned the rest into a delicious jam. 

BTW...I tried some of the jam on a fantastic slice of loaf cake I made over the holiday and OMG, it tasted just like strawberry shortcake without the whipped cream. I probably gained several pounds but I'm not getting on the scales to check.....hehehehehehe

Yummy Cookies

I've been drooling over making some cookies for a month. I found one of my favorite recipes on the back of a Ghirardelli White Chocolate Chips package. I added some Ocean Spray Craisins to mix and OMG, the cookies turned out great. It made 6 dozen but I tested several so I wound up with around 5 1/2 dozen. Did I mention that the cookies go great with a hot cup of tea or coffee. 

I took Mom some and she really loved them. I'll have to make another batch very soon.

Lamb Rack Recipe

I bought a package of lamb the other week & just decided to cook them yesterday.

Here's how I did it.

Preheat grill or oven to 300 degrees.

Make a rug using Accent, pepper, sea salt & a little bit of Coco powder. Generously rub onto lamb rack. Lay aside.

Next, combine 1/4 cup vinegar, 1 teaspoon olive oil, 2 teaspoons honey or table syrup & 4 tablespoons of strawberry, apricot or raspberry jam. Note: This process tends to take the rangy or gamy taste from the meat.

Place rack onto foil bed & pour liquid over it. Loosely cover.

Cook for 1 1/2 hours on grill or 2 hour in oven. If you want it rarer, remove from heat thirty minutes earlier.

This recipe also works well on lamb chops, thick pork chops and chicken quarters.

I serve the lamb with mix veggies, wild rice and garlic bread.

I've been enjoying all the flowering plants & weeds; nurturing my little garden & I'm still getting in some relaxing time at our lake.

Baby Brother

Ayden has a baby brother. He's a little over a month old. I'm a happy GoGo!

Spring Harvest

It's that time again.....hay baling! We've been busy with that around here. It's a sweaty, dusty and draining job but it has to be done for winter feedings.

The heifers don't care as long as they get  cookies (aka-range cubes). 

I've also been tending a small garden but have no photos to show.
